Chicken Fajitas with a Spicy Guacamole Spread

  • Bring a 1/2 teaspoon of olive oil to medium heat in a fry pan
  • Cut your chicken breast into strips and add to the pan
  • Once the chicken has browned, add your green & red peppers, as well as the tomato paste and garlic paste
  • Stir all together and let the vegetables brown in the pan
  • Add the red onion and soy sauce and stir all together. It is now ready to serve inside your tortillas!

Spicy Guacamole Ingredients: 1 Large Avocado, 1 Lime, 1 Diced Jalapeno, 1 Small Diced Tomato

  • Peel and pit your avocado. Cut your avocado then by running your knife horizontally and then vertically across the avocado (forming a checkerboard pattern)
  • Put the cut avocado in a bowl and mash it with the back of a fork
  • Cut the lime in half and squeeze the fresh juice into the bowl
  • Add the jalapeno to the bowl (for only a mild amount of spice, remove the seeds from the jalapeno)
  • Add the diced tomato to the bowl and salt to taste
  • Stir all the ingredients and let it rest in the fridge for 1/2 an hour to allow for the flavour to develop. It is now ready to serve as a delicious spread inside your fajitas!

Crispy Baked Chili Chicken & Asian Style Fried Rice

Crispy Baked Chili Chicken Ingredients: Chicken Breast (1/2 pound), Egg Whites (1/4 cup), Panko Breadcrumbs (1/4 cup), Sweet Chili Sauce (1/4 cup), Diced Green Onion (to taste)

  • Pre-heat your oven to 375 degrees Celsius
  • Cut your chicken breast into bite sized pieces
  • Set up two small bowls, one containing the egg whites, and one containing the panko
  • Coat each piece of chicken with the egg white, and then transfer into the panko bowl to coat with panko
  • Once all your chicken pieces are coated, transfer them onto a non-stick baking sheet
  • Put the chicken in the oven for 12 minutes, turning the pieces over once half way through baking time
  • Once the chicken is done, toss with the sweet chili sauce and diced green onion. It is now ready to serve!

Asian Style Fried Rice Ingredients: Cooked Brown Rice* (1/2 cup), Oyster Sauce (1 teaspoon), Low Sodium Soy Sauce, Grated Ginger (1 teaspoon), Minced Garlic (1/2 teaspoon), Diced Green & Red Peppers (1/4 cup), Minced Onions (1/8 cup)

  • Bring a small wok to medium heat
  • Add a teaspoon of water to the wok as well as the grated ginger. Let this cook down for a few minutes
  • Turn the heat up to medium high and add garlic, green and red peppers. Cook until the vegetables have softened slightly
  • Add your oyster sauce and onions and cook all together on high heat for approximately one minute
  • Make a well in the center of the wok and add the cooked brown rice. Your heat should be hot enough that the rice starts to make a slight frying noise. Leave the wok this way for a minute to let the rice fry up
  • Stir the rice with other ingredients in the wok and add a few dashes of soy sauce. It is now ready to serve!

Each recipe provided is one which was successfully attempted by myself. I try to make my recipes as detailed and thorough as possible so you are able to easily follow along. The full caloric content of each meal is provided before the recipe so be sure to make a note of that. The recipes are all for single serving meals but feel free to adjust as necessary. Also, if a recipe calls for an item that has an asterisk (*), check the “BASICS” page for how to make that item. The Basics page will include items that are frequently used in my recipes. Keep in mind – I am not a professional and you don’t have to be either! Too often people are fearful of the kitchen and you don’t need to be – you just need to look at cooking as a way to decompress and nourish your mind, body and soul. If things are overcooked, burnt or don’t taste the way you are hoping – just adjust what you did for next time. Cooking is an experiment and won’t turn out perfect, or even the same every time.
